  • @Zephilindrum then he should not call the video "sweet and sour pork recipe". That is the name of a chinese dish. He should call it pork dish with homemade sweet sauce. Its like me calling a video vindaloo dish, but saying its not Indian.

  • @Jairzinho121 For one thing, "sweet and sour pork" is a description of said Chinese dish. I seriously doubt that they call it sweet and sour pork in China, it just so happens that Americans referred to it that way due to its flavors. Secondly, it's not just a "sweet" sauce considering the ingredients. Thirdly, he clearly states that it's his take on sweet and sour pork. It's a dish based on the same concept and relatively similar ingredients so he has the right to call it that.

  • @Jairzinho121 Also, he was referring to the Asian-American version of sweet and sour pork which is no where near close to the authentic version at all. It just features the same flavor profiles but spiked up the ass with sugar. REAL Cantonese-style (which is where it originated) sweet and sour pork has a more sour taste to it, with the sweetness acting to counter-balance the sour punch as opposed to being a second main flavor.

I've been making sweet and sour pork since I was 10 but in a non-Chinese style, way before I was even introduced to Chinese sweet and sour pork. It had the same flavor profiles but completely different ingredients so get that stick out of your ass and enjoy the recipe. If you're not here for the recipe, then do everyone a favor and fuck off.

  • I made this again, this time I doubled the sauce and added a tbs of orange jelly to it, a little slided red pepper + bambo then served it over shrimp fried rice. it was a big hit. Thanks Chef John

  • well I just cooked this. wowow Chef John this taste so much better than that deep fried version from a restaurant. I served it over Jasmin rice and a little sliced zucchini. Heading back to the store to pick up some more tenderloin, it was requested to make this again. thank you for sharing this with us.

  • Chef John the sauce is good, I am from Taiwan and we also use ketchup to add the sweet and red color to the sauce, the sour taste we like to use white vinegar (the amount of vinegar=the amount of ketchup), you can use pineapple juice plus the sugar, I like that you put soy sauce (chinese can't live without it) it will we believe it will bring out the strong taste of the sauce :)

  • i am a chinese(from hong kong), i think u almost made the REAL chinese sweet and sour sauce which contains ketchup, white vinegar, brown/white sugar, worcestershire sause, some water/canned pineapple syrup and a tiny bit of dark soy sauce. and i did add some corn starch to thicken the sauce up.

  • @gardini100 I respectfully disagree about palm oil, not hydrogenated palm oil or the even worse palm kernel oil. Smokers smoke a lot every day, people where i visited don't eat fried foods very often and they use a natural unprocessed non-hydrogenated palm oil. I agree that it isn't the best fat in the world, but I wouldn't compare this specific type of palm oil to smoking addiction. Would be nice if they could afford a healthier oil, but once a week is not gonna kill em like smoking everyday.

  • @westislandkev sure i agree with once a week or some not gone do much harm ...but they use it in a lot of products even cheap "fake"cheese ...cockies .nachoes cakes .and so on ..so its hard to control the intake at times ...well im turning 40 soon so i guess im bit on the alert side when it comes to fat and oil :)

  • I made this last night. I had a tenderloin at home already, needed to buy some rice vinegar though, but hey, what can you do? It was excellent. The sauce was thick enough, no need for cornstarch, went well with rice. I might have put in too many chili's, but that's my deal. It was pretty good though, bottom line. That would be 13 recipes I have made of his and I've yet to be disappointed. I'd vote for you having your own Food Network show Chef John! I'm a believer.

  • made it tonight, changed up the sauce just a touch by adding clove, lime juice, chili paste, and a few drops of stevia instead of brown sugar. I think the sugar would have helped to thicken it. Next time I will add some tomato paste. VERY delicious. The pineapple in brown butter I could just eat straight, maybe over baby greens? Served over toothy, medium grain white rice, just perfect!   • You guys are pretty stupid if you think you can eat pork that's undercooked. Ever heard of tapeworms? Pork is full of tapeworm cysts that only die at a certain temperature, it has nothing to do with bacteria. Enjoy your tapeworms.

  • @Zyrog You are of course referring to Trichinosis. He said he cooked it to 140 F, which is about medium. At that temperature, the worm dies in about 1 minute (if it is even there). You could also use pork products that have been frozen for 2 days (this kills tapeworms, but not bacteria). Check out the Wikipedia article on it.

  • Chef John, where did the whole thing about making sure pork is cooked really well done originate from? I was always told that but found that medium really tastes better. I get the whole bacteria thing but we cook all our other meats rare!

  • There's not really an "authentic" sweet and sour sauce. Each restaurant does theirs differently. A sweet and sour sauce is basically a reduced mixture of of an acid and a sugar.

  • Dear John. I would suggest some sweet chili sauce because thats what in the Chinese sweet and sour sauce. Sorry I for got its Chinese name but you can make it on your own or buy bottle of it. Also you can find how to make it in youtube and fruit juices or pineapple(canned) can be added to it. Trust me you'll have a blast.
