Baristas should have tattoos? Tattoos have nothing to do with the quality of your pull. It might affect your interaction with a customer but it certainly doesn't affect the taste of the coffee. Give me a break.
Actually interaction with a customer affects the taste of the coffee. The customers are only humans and can be set under the influence of subtle mental suggestion. :)

Excellent. To apera0915 I think yes in a coffee shop or cafe, coffee is never enough. I used to work with a guy who made the worst espresso but he'd talk it up and people would come back every day for his coffees.

I know plenty of people who steer clear of places because of that kind of hipster douchebag attitude. In Italy, barista is a respected profession. This shit is one reason why it isn't in America.
I'll just take my business to places like Vivace and Zoka (they apparently won), where caring about coffee is enough.
The guys who said that, Kyle Glanville, is one of the most passionate and knowlegeable barista out there... and he happens to be the current US barista champ and ranks 8th in the world.

Yeah maybe I was a little out of line there (I was kind of pissed at the time), but I didn't really say he doesn't care about coffee. I meant that passion for the product should be enough. This arises out of my frustration with the Seattle coffee scene where I've gotten the very strong feeling that a lot of the people I'm handing resumes to take one look at me and figure I'm not cool enough for them. I'm not looking bad or anything, I just don't have any tattoos or any of that.
I'm not saying Kyle Glanville doesn't care about the coffee - I'd just like to make the point that being a barista would be more professional without the fucking attitude. It should strive to be more professional so that good coffee can move away from being a trendy niche market for hipsters and move towards replacing Starbucks and those ridiculous bikini stands. Make good coffee something everyone wants to enjoy.
