@GrizzlyRecoveryZone1 Milk makes the sauce so smooth and is a must for a true bolognese sauce! Milk and slow cooking for at least 4-5 hours blends all the flavours and you end up with a silky rich sauce which is to die for!
Love her! I wish the Food Network in the states would air her shows. They relegated Nigella to once a week and have Giada and Rachael Ray on 24/7. TDL is so different. She is fabulous.
I wish the states would air or at least start a "River Cottage" to show everyone how they can raise their own chickens and have an organic garden. For some reason HGTV which has Garden in it's tile has like 1% of it's programming for gardening. I stopped watching because I got sick of watching rich people buy second homes and gay guys renovate houses for stupid straight women.
@nit1374 traditional Italian ragu does have full fat milk and white wine, not red wine. It seems strange but you need to reduce them down for a long time, until the juice is almost gone, but it is delicious!! You should try it!! The longer the sauce is cooked the better! Within reason, obviously, I wouldn`t cook it for longer than 4/5 hours.

alot of times chopped tomatoes are a diff type of tomato to the canned peeled plum tomatoes and are usually just labeled chopped tomatoes (no plum)... u will see a difference in the color... the plum tomatoes will be a deeper red and richer.. so yeah really the difference is the type of tomato.. if u go to italy you will see pretty much the only tomatoes they sell are plum tomatoes.. so even though you have to chop them yourself they are the better option.. hope this answers your question.. :)

she didnt say its the TRUE recipe of ragu sauce! theres not one specific recipe for anything, imagine if there was and everybody cooked their food EXACTLY the same! THAT WOULD SUCK! youd be bored of food by the time you were like 10!

The milk can seem a little bit odd, but it is actually working amazingly ( I've tried it ). And I love her Kitchen Bible, this is a very useful Book.
