I just lest it go to seed and then kick the plant when it's dried and I get cilantro coming up as a weed. I do this with a few other plants that thrive on abuse, like arugula and mustard and dill.
Coriander is a weak plant that needs support, by the way yours look good, nice and green, not dying, but you probably already learned that. You can only harvest cilantro leafs in the first several weeks of growth, and replant. Otherwise, as you can see it already is going to seed, which is also a good thing.
I read somewhere that you need to start planting new cilantro seeds after 3 weeks of planting the first batch, that way you can cut out the cilantro leaves when they're fresh and your next batch will be ready when this plant is maturing.
Before it flowers, keep the tops cut and have some new baby Cilantro plants, ready to replace it. I love Cilantro, and it matures fast. Grow it in stages, and add new plants - before the older ones mature. Hope this helps.

cut back the flowers to stop seeding I hope this was still help two years later :)

]for clarity the leves are called cilantro and the seeds are corriander.
its good to harvest your own seeds especialy from plants like this that can have more than one generatioin iin one year.

don't pull it out. Let it go to seed. Once dried put stems with seed into paper bag to finish drying. shake. then you have corriander seed !

Dude... You have to plant Cilantro over and over.
