  • Kai, I'm having some trouble everytime I try to cook หมูกรอบ. When I deepfry it, the pork always has explosions in the oil that can be dangerous. I went by your video this time using vinegar and salt to boil it in and also marinade it, but the explosions still happen.

    Do you have any tips for dealing with this? It seems like you didn't have this issue!

  • @maikuro If I can interject and not to take anything away from KAI, I would say your oil is too hot. Heat your oil and add a small piece at a slightly lower heat first. THEN add the main piece just as the fist piece JUST starts to bubble. This way you can gauge the heat comparable to what you are cooking. Another thing is to pat dry the meat. It does not have to be wet when you add it to oil.

  • the method of boiling the pork until tender has a big effect in the skin, it will make small bubbles when fried and that makes it so crispy

    How long do you boil the pork for? Also ,have you tried doing the same with chicken? ( i.e. getting the skin crispy)

  • @fafmouser @ruelrreyes Chicken doesn't have as much fat. The reason he used pork belly is because its a fatty cut of meat. So chicken won't work

  • hmm only thing i can think of is if you put the boiled pork into the oil without letting the water dry off. Put more salt on after you boil, this will help dry it out a bit.

    Try draining liquid from the pork after boiling, and wipe dry with kitchen paper towel.

    Liquid/water coming into contact with hot oil will cause the oil to splash.

  • do you watch good eats? alton brown say's that water and oil don't match which is true and so the pork has water in it pushing the oil away keeping it outside of the meat.

  • I marinate it in thin and dark soy sauce to get the typical sweet thai flavour in the porc. Also if you deep fry it afterwards it gets a real nice color and the skin is very very crispy and tastefull. Vinaigre and salt seems to sour and salty in my opinion.

  • @ltkman I actually wok tossed some crispy pork belly with my Thai morning glory the other day. It was actually really delicious, also threw in some soy bean paste.
