Years ago when i was starting as a chef i was trying to get advice from good chefs as to where i should try and train and this guy was the only one who took the time to talk to me nice chap.
@vicechef It's two star at the moment, was three star with his father albert and uncle michel (yea albert named his son after his brother). There is a fine line between two and three stars though. The front of the house could be keeping him from obtaining three stars
@vicechef The informational is very misleading about Le Gavroche, hasn't been 3 stars for nearly 20 years. I don't think Roux JR done anything wrong it was just that other chefs had up'd their game and were producing a higher level of cooking in the eye of the Michelin judges (Marco Perrie White spring to mind, the guy was untouchable at the time) and Roux is quoted as saying he didn't want to change and down that route.

Gavroche is a character in the Victor Hugo novel 'Les Miserable' (also the musical adaptation of the same name). He is a street urchin who fights with the resistance. The restaurant Le Gavroche is named after this character and a painting of the boy hangs in the dining room. Michel Roux junior describes the character as a boy who is hungry and looking for somewhere warm where he can get a meal - thus the philosophy of the restaurant.
