Your point about needing fiber in our diets is valid, but the point of juicing is to get the vitamins and minerals into the bloodstream super fast. The fiber slows this process down and you can get fiber in your diet by other means; same goes with your point about the water.
The thing is, it's not really whole juice. It's juice, water, and pulp. A juicer would separate the juice from the pulp without watering the juicer down. Blending it also heats the 'juice' up which starts to destroy the enzymes and nutrients and by whipping the juice around in the blender, you're now oxidizing the juice.
Juicers just separate the pulp from the juice, you can eat the pulp if you wish and get all the fiber you need.
