I had heard so many pros and cons about Kimshi I was afraid to try it then I tried it and now I eat it practically every day. It's cabbage with spices which I think would go well with probably italian, spanish, greek, middle eastern, indian food. I find that kimchi that is 2-3 weeks old tastes the best for me I especially like the cucumber kimchi. Ribs w/kimchi taste good and good for the digestion.

California is becoming more Hispanic every day and Hispanics have an appreciation for spicy food. So, even though Koreans have over 200 different kinds of kimchi, most of which are not that spicy, I think spicy kimchi will be more popular in this part of the USA than the milder types.

Kimchi is one of those things you have to introduce gradually. When they are really small, rinse it off and serve it to them so they get accustomed to the sour part and go from there.
I'm thinking about doing another kimchi video for my next recipe. The kimchi is pretty well hidden, maybe too well hidden. We'll see.

Koreans make kimchi with cabbage, daikon, turnips, cucumbers. They have over 200 regional versions.

not a bad thing, it was just funny or cute. I will say though that watching this made me rethink kimchi, but I just can't get the kid to like it.
