a better cut test would be cutting some news print or regular paper, and the reason for the water on the whetstone is too keep it clean so that the metal bits dont get stuck in the stone ruining the grit, also the knife sharpening knife is just like a kitchen steel rod, it straightens the blade but doesnt actually sharpen it
