did you see the fall that the aikidoka was taking? it is not easy fall,you can take normal fall without jo ,but with jo take the fall like that is not easy.
Where do these kumijo kata come from? The only ones I know are Saotome's, and these clearly aren't his.

Depends on the viewpoint.
For a Kyu it is probably more difficult.
But for a Hakama, who falls and rolls as if he never did anything else since birth, it is fairly easy.

The yelling is kiai. It's common to many martial arts.

Any Japanese martial art is incomplete without Kiai. Of course, that's my opinion, but many share it.
