I've done similar stuff on Magix's Audio Cleanin Lab (costs less than $40). I could add in track markers instead of breaking up one long file into sections. That's how I could make CD-R's as well as MP3 files. That same software can also be used to convert one format to another (compressed to uncompressed or vice-versa).
Talk about artwork, I've seen a few videos here on YouTube that shows a still image while the music's playing. But the sound would be in mono.
Manually, mostly... I haven't really done this to hundreds and hundreds of albums, so I just search on the internet for the album artwork... save to local drive... in iTunes add artwork.
It is a pretty weak part of iTunes I think, even for CD's... so many of mine don't have artwork, or get the wrong artwork. And I have a LOT of CD's on my pod.

How do you get the vinyl cover art to your iPod so you can see it on the QVGA iPod screen?

you said your turn table was stanton, but I think... that the table is techniques and the needles it uses is stanton. I could be wrong.
