@swissgravy Chad mentioned somewhere that he made it up, because it sounds like a slang term that would fit the tone of the song. The full line "they see me mollyhockin' over the haystack" likely means something along the lines of "doing something risky/bad" since the following line "they see me swimming with a bow-legged [hound]" is similar to tje real phrase "swimming with bow-legged women" which means "loose" women, which may mean doing something "risky/bad"...
