I'm nearly positive this is an independent animation. this is not a pixar movie, nor is this dreamworks quality either. though reminiscent of a dreamworks character, the voice is wrong and the whole character design is off. those ginger bread men, the one from this video, and the one from shrek, are not the same. perhaps one of these videos acted as inspiration for the other, but neither are the same as the other.

this is a song by Lonnie Mack called "Oreo Cookie Blues". Lonnie Mack was a good friend of Stevie Ray Vaughn. i have a live recording of this song that was done at the fox theater in Atlanta on Dec. 31st, 1986 that features both of them playing this. if this was a pixar vid. i would hope that Lonnie got his cut for the use of the song.

A quick google search will reveal to you that this is NOT a Pixar short film. And if you looked at his resume on his website, he has not once worked at Pixar. Doesn't look like Gingerbread man from Shriek. For one they don't have the candy buttons. The lips should be red and the eyes should be just a drop of white icing.
