@hodgrix ok remember AB said that butter has a low smoke point which means it melts at a lower temperature. Well if you grease a cake pan with butter, it will melt too soon and the water in the butter will turn into steam. Because it has nowhere to go, it will condense on the bottom of the cake and make it mushy and squishy and un brown. I hope that answers ur question! :D
he said using butter to grease the pans would prevent the cake from browning. ive always thought the opposite, as butter browns, because it has some milk solids. its not a full 20% water. sum1 correct me if im wrong

Pyroblazer: I know, right? There's a ton of people on YouTube who seem to watch Good Eats just to gloat whenever they think they've discovered Alton using a unitasker or using false information.
It can be pretty irritating to see.
Yes, Alton Brown does sometimes make mistakes, and yes, he sometimes contradicts himself. It's not like he isn't aware of it! The whole "STUFFING IS EVIL" sign popping up whenever he talks about stuffing or filling wouldn't've become a running gag if he wasn't!
Yes and no. Good Eats Cocoa Mix (from Art of Darkness II) does contain cocoa powder, but there's more in it than use cocoa powder. There's powdered milk and powdered sugar, cornstarch, salt, and even a little cayenne for some kick.
Darkblade119 you may want to increase the time by at least 10 minutes and check after 5 minutes. Everyone's oven is different. I know mine can be fast. I baked a cake today and it was done in less than 30 minutes.
it's not supposed to be done in 12! you're supposed to check whether it's baking evenly at 12 minutes and move them around if necessary. it should take ~30 minutes for them to bake completely.
But how long do you bake them??

Lok you gotta love that one guy that posts "OMG HE USED A UNI-TASKER!"
When it is not a unitasker, an unitasker would be a garlic press, or a yogert maker

cocoa whipped cream : do you have to let the gelatin-water mixture cool first before adding it to the other ingredients?

Actually they're great for making sausage links too :)
Visionism 4 years ago 2
It's as much of a unitasker as is his electric hot water boiler. You can put many diff. things in both.
dsm4gsus 4 years ago 2
The thing can also make marshmallows, merange cookies, filling popovers, eclairs, the list goes on. Its not a unitasker but it is more expensive.
