It's true Hank is meant not to be able to read throughout the series, but he so often stares and smirks at Dorothy's notebook while she's writing that it's already suspicious whether he's telling the truth.
Besides, does anyone remember when Hank and Jake were pulling tricks on each other? Michaela said - this is ridiculous, Hank answered - are you kidding? I never had so much fun since I was in school - i.e. he must have learned to read.

I think you are confusing Hank with Jake on the illiterate part. Hank has been able to read throughout the series. Jake was taught to read by Dorothy in one of the earlier seasons. I'm in no way sticking up for Hank's behavior, just saying he is not illiterate.
No, I think I remember an episode where Hank said he didn't read...it was recently too. I'll have to remember which episode it was, or at least the context, but I'm fairly certain.
It's in season 1. When Brian jumps from a tree and hits his head then loses his sight due to pressure. Loren found out Jake couldn't read so he went to the saloon to drink and Hank was telling him that he couldn't read either

Hank later on learned how to read thanks to Theresa Morales. Jake got jealous thinking there was something more to their relationship because Hank made her promise not to tell. I am not sure of the name of the episode, but I remember watching it. Most of the series, he was not able to read.

I think Hank is jealous of Sully and feels something for Michaela. He doesn't like knowing she has been pretending her husband was dead.
