in Itunes when your ipod is connected you just have to click the "restore" button, it will format and re-install latest firmware to ipod. Easy as.

Final question, if I jailbreak the ipod, and a new update for the software comes along (say 1.1.5), will itunes detect that? and block it???

If you're getting the BSD root error (which im guessing you are)hold down the home and lock button past when it turns off, past when the apple logo comes back on, and until you get the ipod connector symbol. Now restore it with itunes.

Then try my tutorial on jailbreaking 1.1.4

while the ipod is plugged in hold the sleep/wake button and the home button until it reboots once it does let of the sleep/wake key and keep holding the home button until itunes pops up and press ok then press restore
