Hi Tifa, I used to make something like this mongolian beef nearly 20 years ago, but it was always missing something. It is delicious. As for cooking the beef twice... It's Chinese way...  Actually, the advantage of cooking it twice is that if a lot of oil comes out of the beef, so before you add the rest of teh stuff, you have a chance to drain that out. I should have done that with this recipe, because you can see at the end that there is too much oil on the plate. I hope you enjoyed the food! Love Tifa :) 3
