When he wraps it in foil and poaches it in water, it cooks through but just has no texture, then he refrigerates it because if would fall apart if you opened it right away. Then Its cold but cooked through and he browns it and the whole thing warms up by then.

  • @lovingfro - did you wrap in foil tight enough. Mines was did the same thing, but I left it to someone else to wrap in foil. Safe to say, they did a crappy job IMO. I'd give it another run, remember - tight wrap and maybe even poach a little longer. It wont dry out.

    The water would wash the salt off anyway, in that case.

    If, however, you season the water, you'll get equilibrium between the salt in the food and the salt in the water and a mild brining effect will occur (in the sense that the bacon will not lose a load of salt. The same sort of thing happens with veg: salting the water doesn't keep the colour, or season them, but it stops them losing nutrients, salt, and sugars)

  • I have a question for chefs and food critics...

    What do you do when theres chicken hair on the skin?

    I see that and I get disgusted... I try plucking them, pulling them but hair is hair and you cant get rid all of it. you burn them but only the upper hair gets burnt but the lower part would still be inside the skin.

    What to do with that?

    Chickens don't have hair, I think you meant feathers. Just check the chicken before cooking it, and if there is any feather just pluck it out.

  • @UnpektopJhabz I know they dont have hair.. so lets say really small feather hairs... next time you cook a chicken or get ready to cut it, look at it properly and you'll see what I mean. Not feathers but actually small thin hair-like strands...

  • @saznrai Pull them out. If they are long you can grab them with your fingers and a dry towel. Short ones can be pulled with a pair of pliers.
