Either he changes the vocal melody, like in the beginning of the chorus here on Jack of Diamonds and rather build up to the standard lvl on the albums, or he sings parts one octave lower. Both are obviously much easier to do, so I assume he does it to avoid any screw ups. On the albums he has much more time to perfect his vocals, but I guess they're harder to match live for him. As much as I love Roland's vocals to death, I'm afraid he's technically not at all a perfect vocalist. That's life :)
