@ditrataral Shrimp take a notoriously short time to cook, so most likely by the time you get a crisp sear on the outside, it will be done on the inside, too, and any time in the oven would just overcook them.

It enjoyed cooking this one. However, are there any tips on how to not have my house smell like seafood for days after? I suspect it was shrimp shells on the stove that really did it. .
this is good but one issue is having the lemon juice in the ketchup mixture. If you boil lemon juice it looses quite a lot of its freshness, it would be better if you just finished the sauce with lemon after adding the butter, instead of having it boil. Trust me, it makes the world of a difference
emouch1- I think for some applications you'd be 100% correct, but in this case I think fresh juice at the end would be a mistake. Cooking it complexifies the flavor and allows it to meld better with the rest of the ingredients. Leaving it raw at the end would give to much of a tart twang that would distract or cover up the flavors of the rest of the ingredients. The fact that he uses fresh over bottled is just a question of quality of flavor and has nothing to do with the final application.

And even with 2-cups of corn in the custard. (The Corn threw me for a loop.) If you only use a "One ramekin" serving with the shrimp. And watch how much you use of the shrimp-sauce. It comes out under 15-20 carbs a serving.
