  • It won't be the same.

    The fat will render faster. There will be less and different flavor. Salt pork cured (salted), hence its name. Fatback is not. Curing has a strong effect on flavor.

    You can still get a good result, but it won't be quite the same result.

  • "Viva" is Spanish. It should be "Vive le coq au vin" and "Vive la France."
