It won't be the same.

The fat will render faster. There will be less and different flavor. Salt pork cured (salted), hence its name. Fatback is not. Curing has a strong effect on flavor.

You can still get a good result, but it won't be quite the same result.

"Viva" is Spanish. It should be "Vive le coq au vin" and "Vive la France."

except due to french pronounciation rules, 'vive' when followed by a consonant, is said somewhat like 'viva'
