babaganuc does know a good Indian cook would never use "curry" powder. Curry or Kari is a sauce which is made up of various spices. It's the different spices that give this it's uniqueness from one cook/region to another. One recipe I want to try uses Cardamom pods (ground).
I've done very similar recipe only changes were: no fennel, no cayenne, added a green chili, yogurt in at the end, I used more water and reduced. I'll experiment

It's the first time I've seen someone sear the chicken before browning the onions. You can see the chicken bits sticking to the bottom of the pan. Using separate spices is always better than ready made curry powder. Also, you must brown your onions properly for good curry taste and color. Regards.
Yes Coconut oil is high in saturated fat but it is mostly "Medium Chain Fatty Acids" which are the good kind. Also the only source of "Lauric Acid" besides Mothers Milk.
Your body needs saturated fats to function properly. The real danger is the "Trans Fats" which are so abundant in processed foods. Stop eating processed foods and you don't have to worry about eating too much saturated fat.
I eat coconut oil straight off the spoon and have lost weight after cutting out the processed junk.
Excellent Instruction. I made mine using all "organic" ingredients. I used Coconut oil instead of Canola oil. Your viewers should be aware that Canola is not a healthy oil to use. There is no such thing as a canola plant in nature. The term comes from "Canadian Oil". The oil is made from the "rapeseed plant" which is toxic to humans and animals. Also most all Canola oil is produced from Genetically Modified Organisims, not good at all. If you must use it, at least buy it "Organic".
