do you fry or grill them...i love eggplant usually i grill them but what do you recommend to give it a delicious taste?

I grill them, this way is has a more delicate taste but I guess you can fry them either.

You can use smoked tuna in slices. I never tried with salmon, I don't know if it tastes good :)

Anyway I think any salty fish will work !
