shame they didn't talk about the Guatemalan version of the tamal and tortilla; and a Pache isn't the Guatemalan version, it's a tamal made with potato based masa made in the Guatemalan highlands mainly Quetzaltenango. Also Colombia as a Central American country? Get Alton a map please.
I love Alton Brown, don't get me wrong, but the masa is too darned stiff. The tamals are much lighter when you get the consistency more like a thick cake batter! Trust me - I live in Mexico and have been doing so for the past 4 years! :) I make them "corn husk to eating" in 2 hours flat!
@Alex052480 Those are Northern Mexican tamales. But there are really a huge variety of tamales in Mexico, about 5000 to be exact, that vary in size, texture, and size. Masa made from plantain, yuca, poatoes, corn, wheat, beans, chia, oats, quintonil etc....Also wrapped in corn husks fresh and dried, banana leafs, agave paper, hoja santa, pozol, milinillo, huilimole, cherimole, frutilla etc....The names vary as well like vaporcitos, tamales, nacatamal, envueltos, corundas, zacahuil etc...
I HATE those kind of tamales. When I was working in Texas the Mexican guys would bring in the best tamales from their wives to sell. AUTHENTIC. They were not huge like that. They were about the width of 2 fingers. The dough was not dry and crumbly. It was moist but not wet. The filling was not slimy and sloppy. It was drained and pressed. Everyday they had PERFECT tamales. In Chicago all you can find are those jumbo, sloppy, nasty tamales. Unless you've had a REAL tamale, you just don't know.
We have a guy about 1/2 a block from my house who makes his own tamales every weekend and sells then for about 75 cents each...Greatest things I have ever tasted. I can't eat any other tamales cause his are the best.
One time. I don't think you have given them the chance that they deserve. If you just don't like the flavor of their food, that is alright. I just think you should give them a chance.
That's all-clad cookware! Good stuff but I find it difficult to spend $1500+ for the full 14 piece set. My calphalon does me well. Must be nice...
