I like gas fired grills because of the ease of use. Charcoal is hard to start without a fire starter. If you use too much the food gets the fire starter taste in it. You have ashes to dump after the fire is out. With gas fired grills all you have to do is clean spider webs out of the orfices once a season. And clean the grill as you use it.
@norb1937 If you're getting fire starter taste, then you're not allowing the fire starter to burn off before applying food. You light your charcoal as above, keep the lid to your grill open/off until all of the coals turn white (which ensures all the fire starter has been burnt away), THEN apply food to your grill. If you do not follow the above basic grilling directions before applying food, then you deserve to eat fire starter. Propane gas isn't much different than the kitchen gas stove.

We cooked meals over a fire in the Bay's rocks. Its what they call Roughing It. I used to use fat instead of fire starter to make the charcoal more flammable. I like cooking with a stove. The gas co I used to work for used to sell outside grills that used natural gas, no tanks. They ran an underground pipe to the outside grill.

You don't directly put the fire out when you're done. It burns itself out after you close the vents. And as far as regulating the heat, that is part of the art of grilling. Gas grilling is convenient, but it's not the same experience nor the same flavor. I personally do not understand why so many people feel like there needs to be a debate between the two fuels. They are both entirely different in my opinion and should not be compared.

First, use mesquite charcoal, not briquettes - your food will taste much better. Second, lighter fluid adversely affects the flavor of your food - especially the cheaper store brands. Use a chimney starter or an electric coil starter. Third, using soaked wood chips makes your food taste like wet wood. Instead, place one or two dry wood chunks up against hot coals on the edge of the fire, where they will smolder and smoke but not catch fire.
Ahh... yeah lighter fluid is nasty stuff.. literally it taste horrible, use the chimney. Also I do not soak my wood chips I just toss a little on the hot briquettes before I cook.

gasoline is very dangerous to use and will ruin your charcoal because it burns a lot hotter. very unstable, and the residual gasoline vapors will make your food taste really bad.
Use a charcoal chimney! You'll save the price of the chimney in no time by not having to use expensive fluids or lighters. You can use newspaper and it is more reliable than any other method.

Why so many briquettes?? We're not trying to burn down Rome here, we're trying to cook. Unless I'm cooking for an Army, I fill half the grill with charcoal. I start with searing in direct heat, then wrap up with indirect. My steaks come out very juicy and tender.
