He has used sodium acetate to help with supercooling the water. It is highly unlikely you can do this with plain water because it has to have little or no inpuritys.

The water has to be pure, the purer the water the colder it needs be to freeze. Water can still be liquid at -20 if its very very pure.

the best way to do it is to get an unopened bottle of distilled water and leave it in the freezer for at least 3 hours depending on how strong your freezer is and after that take the bottle out slowly and do not shake it or disturb it and slam it in the kitchen top and see instant ice! it is not solid ice but more like i blended or slushy ice you can use it to amaze family or friends!

to supercool water there must be no impurities in the bottle. A bottle with smoth sides helps too. When the supercooled water touches an ice crystal or something else like a particle of dirt it can start to form ice crystals as it has aa "seed" from which to grow. If your water freezes in the freezer it is because of impurities in the water or bottle or because of a bottle that isn`t perfectly smooth.

Awesome but when using Acetate it like stays frozenand if you have like a gallon of water you can stack on top of it and make it like a non-slushy stalagmite 20 feet tall stalagmite! It's so much fun. This is good for beginners though and I recomend this first!
