guacamole can just be mixed in the blender. it's smoother and alot faster. you dont need to freeze the taquitos if put the right side down in the pan and keep them all together. freezing the taquitos will make them thaw in the hot oil. you know hot oil and water mix right. THEY DON'T!!!!!!!!!!!
overcrowding is the last thing you want when you fry stuff because that means greasy food. No way there's enough fire power in that thing to fry this many frozen taquitos properly all at once. I would fry them in smaller batches or just spray them with oil and bake instead.
To keep your taquitos from opening where the flap is. use a paste as a sort of glue. just flower & water till its a paste OR you cud use eggs but make sure you have the yolk becuz that it what makes it like a glue so it will stay shut. We use this method to make lumpia ;)
