The driver of those boats sit in a small "egg" which is actually very strong. Around the "egg" is a lot of lightweight material which is the debris you see falling all over. The egg then floats with upside up and may not be opened until a rescue boat arrives. I've seen one driver who was so confused after the crash that he opened the "egg" before and started to sink. They managed to rescue him a few seconds later.
