Anyway, in the 7 months between the video being made and remy3315 asking that question, the optical image quality turned out to be actually quite a lot better. Better than people were expecting when the press release hit.

Difficult choice! Going from the 500D to the 5D2 will be a more fundamental change than the 70-200mm f/4 -> f/2.8 II. Also the 5D2 has dropped in price but the 70-200 II is still at its RRP. I would be tempted to upgrade the camera. However, there is meant to be a 5D3 on the way to balance the 7D.
For this lens, if you're shooting at a high frame rate, say on a 1D Mk II, the IS will actually slow the AF down and I think the frame rate as well. Assuming you're shooting sports that have a lot of movement (IE American football, soccer, etc) you won't need IS because the subject is always in motion. IS is practical for something like landscapes, wildlife, portraits, etc.
Yes, but for those kind of shots you can turn the IS off. But it's still there when you DO need it, with its lovely four stop equivalence. I wouldn't call that 'useless', I'd call it versatile.
It would however be really interesting to compare the AF performance across the 70-200mm lenses on the various 1D models.

It's a great portrait lens, but with those, you'll have decent lighting, so you don't even need it then. If you aren't planning on going full frame, then lens lens lens! I use the Sigma 10-20mm for wide angle and it's a great piece of glass.

For this lens, if you're shooting at a high frame rate, say on a 1D Mk II, the IS will actually slow the AF down and I think the frame rate as well.
