  • @MissVietnam9x I think they are basically same product. One from Japan and the other one from Korea. For me the taste so similar though ^_^

  • @zerle12 so can i make miso soup using soybean paste without using miso paste? would it still be the same taste? and replacing dashi with anchovies, is that possible? would the taste somewhat be similar? sometimes ingredients can be difficult to find, so i'm trying to modify using an easier to find ingredients

  • Is soy bean paste (doen jang), the fermented or not fermented? Is it similar to chinese fermented tofu?

  • Maangchi, is cooking in the (clay?) pot (you used) contribute to the taste of it compared to cooking it in a stainless or a teflon-coated pot?

  • @wealtz You can use a regular pot to make this stew. Heated earthenware pot will cool down slower than a regular pot, so you could enjoy hot stew longer during your meal.

  • @nbo345 no, fish sauce will make the stew too salty. Use chicken broth if anchovy stock is not available.

  • i have a question about the bowl you use. many people call them stonebowls. i am currently trying to purchase this type of bowl online for bibimbap and jigae but i am not sure if i am looking at the the right one. The title is earthen bowl, can this be used to cook these type of food?

  • @sensez8tion yeah, it's called ddookbaegi in Korean: 뚝배기 It's actually earthenware bowl. Check the photos of eartheware bowl and stone bowl in my kitchenware section on my website please.

  • Just finished doing it and it is absolutely delicious!!!!!!!! Just didn't add the anchovies and shrimp cause i'm a vegetarian, but it was tasty all the same *.*

    ohh and just one think, how do you make your tofu act so "solid"? In all my experiences with it, the tofu is really soft and crumbles. And I've tried different kinds of tofu as well. Is is a special brand you use or something you do?

  • I've never seen this soup served with salad together in the same bowl. Is this common? In the past I've always had the soup seperate in one bowl, and rice in another bowl. Could I also serve your soup that way?

  • I prefer large dried anchovies for stock.

  • I bought a small tub of Korean bean paste (the same brand as yours), but it is dark brown not golden brown like yours. The flavor seems to be fine, but the color is very dark. Why is that? I'm thinking of mixing it with some Japanese low sodium white (light golden brown) miso.

  • strange! It should be golden brown. Yeah, that's a good idea of mixing it with Japanese miso. Check expiration date when You buy soy bean paste next time.

  • Aren't you supposed to boil the water and put dried anchovies first with Doenjang?
