One thing you left out when you put the pinion gear on, ALWAYS use blue locktite on the set-screw (grub screw).

How would you adjust gear mesh?

it seems the motor plate will not allow for adjustments.

@tw8e60 The gear mesh can be adjusted by rotating the motor/motor plate. Rotating will give u a tighter or looser gear mesh, hold the motor still while screwing in the mount to maintain the gear mesh you like.

@guidolax Higher KV = More power, more possible chances of overheat, and sucks out your battery

Lower KV = More torque (sometimes they have a mad torque increase), less chances of overheat, and conserves your battery. If you haven't figured out as your comment is 2 months old
