So the percentage is the percentage of milk fat that is in the milk. Skim milk has no fat because they skim the Fat off the top in some odd process. Which is why in the movie he says "I see your drinking 1% is it cause you think your fat?" 1 percent has less fat and you really only get 1 and 2 percent skim and whole. I know it's complicated.

The thing about the milk in America...it doesn't make any sense. The percentage stands for the amount of milk fat. I don't know how they remove the fat, I don't really want to know. We Americans are under the impression that if we do things like drink fat-free milk with our enormous breakfast and a diet coke with our super-sized burger and fries, we will suddenly look like our movie stars, because that is the only difference between us and them. It's a very small leap to reality television.
