I would think drastically changing the temperature of an acoustic soundboard would be extremely iffy. You could just as easily seperate bracings and bindings and crack the wood as cracking the finish. But then again, I have never done it before on purpose, so maybe it works just fine. I have my doubts though.

An acoustic guitar's structure is very interdependent with the top and bracing the most important and with the top the finish comes into play. Any changes to these areas will compromise the tone IRREVERSIBLY! The top of the guitar is where the sound is generated from because it vibrates as a result of the stings thru the bridge

Many years ago I worked on the TV commercials series "Levi's 501 Blues" and one of my jobs was to distress pairs of blue jeans to look worn in. Yes, it worked for the camera, but there's nothing quite like a pair that have been broken in over time. Same goes for guitars. I highly doubt Willie Nelson trashed his guitar overnight.

it's just aging the finish. the spruce is fine. no more damage to the wood there than playing it outside on a sunny, humid day

they do it for the same reason you or others buy guitars with the cool paint job, or great ornamentation.
looks isnt the biggest thing in a guitar acquisition, but DEFINITELY a huge part in the purchase.
