Yes he is one of the best. The thing is, In my restaurant (top 5 in U.K) I did 62 covers on my own in a 2* michelin and If I took that long then I wouldn't have a job!!!

This is the biggest load of wank I have seen from a sommelier. It really is a load of trite and not difficult. This behavior is everything I dislike about wine and European wine's over pedantic service practices.
