I personally find that 2 cups of water and 1/2 cup of dairy works great for me. The four cups total that he mentions is 'way' to much, wound up with soup...not oatmeal. But still tasty!
I just made the oatmeal from this episode and my oats didn't soak up all 4 cups. I would say 3 cups total for red mill steel cut oats. His recipe also makes WAY too much for one person. I have no idea what to do with all of this oatmeal. Pinheads are the way to go though.

For the record...he also said to use vegetable oil for the granola, but the text shows canola oil...no big deal...a lot of the Good Eat's recipes on the show differ slightly from what's posted on the Food Network website...I made this granola a few weeks ago...Delicious!
