Even if pre-cambrian life could have evolved to such a complicated lifeform (which is very unlikely) such a big creature would have nothing big enough for pray. And after all it seems fully terrestrial. There was no terrestrial life in the precambrian except maybe some bacterial exception (and even tjis is unlikely)...

The Key is the episode name and they'd stunned El Blanco with hard sound gun then when the people of Perfection came to see what was wrong with him they dug him up so they could take him back to Perfection and find out what was wrong with him. Rosalita and Tyler were driving the truck carrying El Blanco and this woman and her associate hijacked it and them.
