What you got to understand is "gorn" is the grammatical combination of the words "gore" and "porn". Violence and Sex. These two subjects are so popular in entertainment media it's possible to combine these to make "gorn".

In "Mannsfield's" case, he lusts for "gorn", having a gun at his side and enjoying shouting sexual idioms. This is the same lust you'd expect from a Texan hic with a bad repuation for animal slaughter and rape, all seen from a posh, upper class British Lord.
