For the combinations "poori with paanakam". Paanakam is the Mango juice. I make the poori , and for the paanakam Take the mango pulp(available in any super marke / indian stores) , add some milk, crushed ice and sugar and blend it in a mixie. Make it a little thick . and have fun with poori..

Well!! someone must be real stupid now!! If this great chef need to teach you how to add salt, EVEN!! Everyone having the least common sense, should know that we have to add salt for taste in food!! pffff...sometimes!!!!
I have seen most of recipes, I learn how to cook north indian dishes at home. because i am south indian. In baingan tomato curry, you did not put the eggplant in to water after cut in to pieces. unless you put in to water with little salt it becomes sour teast
probably not supposed to put in saltwater (and then drying on paper towel) for this dish if you're frying the eggplant. i actually followed your way for this dish, and it ruined my oil so i had to throw the oil away and also made the eggplant VERY soggy, also consumed hell lot of oil. what chef did here was correct. i recommend everyone to NOT soak eggplant in water for this dish - just cut it right before frying (the way chef explained.)

@iloveyumika OK I will give you item by item but he forgot the salt. First he fried egg plant pieces. He took oil added 4 red dry chillies, then added some mustard seeds then cumin seeds then sliced onions, then few curry leaves, chopped green chillies, then ginger garlic paste (not a must), mix it. Little turmeric and tomatoe pieces, 1 1/2 tsp coriander powder and 1 tsp of red chilli powder and add salt. He sauteied ground nuts and sesame seeds and made powder and added to the cooked curry.
For anyone wondering when to add : Add it when you add chilly powder! How much to add - depends on the qty you are cooking but about the amount of chilly pwder or less... You can always add it later too!
The biggest difference between vah chef and others is, when you follow his procedure, the dish turns out to be exactly as he does including looks and texture, The best chef ever. You are an instpiration every one who has interest in kitchen and cooking. Especially when he eats the preparation at the end, I envy him and mouth waters profusely always.

Instead of deep frying eggplant, put a tea spoon of oil on the cut eggplants n microwave it for 10 mins. The other process wont change. It tastes the same and is healthier.
I agree with veevantube. You can shallow fry it instead of frying. Thanks for sharing this Sanjay. I'm one of your fan and love your cooking. I tried many dishes and all came out good. Keep up the work.

I made this today instead of ordering Indian takeout as was my original plan. I was surprised at how easy it was to make and it tastes incredible! Can't wait till later so I can hit the leftovers -- I'm just too full right now to eat any more. ;-)

Definitely Peanut is best ingredient to bring crispiness to curry but you may try substituting with chana dhal.

Nice recipe!!I do drumstick curry in the same manner,but I don't think you need to deep fry it,you can just boil it or microwave it .
