so close to a healthy meal... then cut off all the fat (the healthiest part of the animal) and completely destroy the remaining lean meat by cooking it...and whatever happened to using as much as they can........frustrating
thanks for your comment! i wanted to let you know that while the fat was trimmed for packing, all of the fat was saved and used for food and rendering for projects like candle making. we used as much of the buffalo as possible.
@Theplasticbagtrick You're kidding, right? Do you really think fat is healthy for people to eat? And, yes, meat should be cooked before it's eaten. Please explain how fat is healhy and people should eat meat raw.
Thank you for this. Every year I help with the HoChunk bison round up in Dec. Even though we do it in the coldest of winter, some of the animals still over heat and must be killed a butchered. I learned very fast that it takes a village to butcher even a few bison. It is a very moving time, working with such large animals.
The meat is so much better for those with diabetes to eat than most domestic meat-why more and more tribes are working with bison.
I love these videos. I think everyone who eats meat should have to kill and clean an animal at least once so they don't lose touch with where their food comes from.

also bison/buffalo is very very low in bad cholesterol...a very healthy meat. low in fat that almost all other animals..accept emu I think.
