Sure, it will vacuum seal, but it won't sterilize, so use with caution. Funny last year I had the same idea using a cheap all aluminum pressure cooker, and moding it to a vacuum chamber for desiccating lab samples. I'll be posting soon my video of my modded harbor freight vacuum pump, now with a vacuum regulator.
