At the beginning of the video about 0:02, one of the students pushes the officer hard on his right shoulder. The officer regains his balance, pushes back the group crowding in on him and punches one of the demonstrators only when he again advances towards him. When the crowd does draw back a little as they had been instructed to do, the officer does not attempt to inflict any more violence.

It is certainly not the case that it is illegal to punch someone in any and every set of circumstances. You say the riots are at least partly a result of people being pushed and cornered like sheep. However, look at the violence that occured at Milbank towers in one of the first student demos-there was no police containment in place.
