I really like Akama, he tells us in the Black Temple patch trailer, that he once was a part of the Draenei in the Black temple, but got driven and got help by Illidan, Kael, and Vasj. But he always knew that Illidan was going to claim the temple for his own, and after that he grew a strong hate for Illidan, but pretends to work for him, to finally strike with some "Heroes", including Maiev one day. Back in TBC, you could do his quest and get a neck that TPed you to The Black temple.
I mostly play horde but I'll give you an ally npc that was awesome.
Volcor. He's a hunter with a bear that pre-cata you escorted him out of a cave near the ashenvale border.
In cata, he's one of the wounded you find on the beach from Auberdine. He asks you to rescue his bear. Grimclaw was wounded and you gather the items to heal him. He runs off, and by the time you return, Volcor is dead, Grimclaw made it back in time for Volcor to know he lived.
Maeiv Shadowsong in by far my favourite out of these 5. The RP when you fight Illidan is amazing! I've ran BT weekly for 6 months ( I have my glaives now though! ) and even now it still gives me shivers. =)
The huntress... is nothing.. without the hunted....
I think one of the most underrated NPCs in WoW is the on rogue NPC that is standing in the pier in redridge mountains, forgot what his name was.

I do have to say Maeiv doesn't get enough attention... First time I fought Illidan I spoke out in Mumble and was all "who the heck is she?"
My favorite NPC is Chromie, though I don't think she counts as underrated... Hmmm...
