You can extend this same idea to real-time in two different ways.
1) You could pre-program dummy clips and fire them (via MIDI mapping using foot controller, APC40...) in real-time.
2) You use MIDI mapping to map a real-time MIDI controller to the same parameter in the video. For example, you could map to a pedal so when you swelled the pedal up, you'd get more velocity - voila real-time velocity.
