I made cheese similar to your recipe but w/o the vinager. I used half buttermilk, half whole milk. Left the buttermilk out on the counter for 6 hours and used the juice on one lime to curdle the milk. I pressed all the whey out of the curds and made a hard crumbly cheese which has made a really great salad cheese!
