@MistahFen As long as they've begun to blush (turn red), it's safe to pull them off since they are no longer growing. They will continue to ripen while sitting in your kitchen. They are safe from birds this way too.
@veggiegrow7 No. they're Burpee Big Mama Hybrids. I try to use only heirloom varieties, but these make the best sauce and they're easy to grow. I did add another paste tomato this year. San Marzano. They are the first to set fruit, so I'm excited that they may produce real well

It's advised to wait one week after they turn red to make sure its completely ripe/sweet.
