"Fat tuesday" was the day before a week long religious fast in which all excess food was eaten which went coupled with a celebration. The name "carnaval" literally translated means "Farewell to meat" ^^
Although many sources say the practice predates Christianity and like Christmas it was simply co-opted by the church.
