I just happened to have made an eggplant mush. I roasted two medium sized eggplants for 50 min & then mushed `em up with a couple cloves of smashed garlic, salt & pepper. I didn't feel like adding lemon & I didn't put in tahini. I've left it to sit in the fridge for the last day & am anxious to try it for dinner tonight. We're going to have it with sesame lavash crackers & a big salad.

I lived in Dubai for about 15/16 years then moved to Sharjah. Now moving back to Dubai again within the next 2 weeks. :)

Frying eggplant seems to take so much oil, this can be just as delicious.
