Just wondering what your opinion is on this Keith: your "fresh" beans are proven to be less nutritious than frozen veg, as they are frozen as soon as they are harvested, making them more healthy than the "fresh" vegetables people tend to buy, which are actually lying around for longer periods losing their nutritions.
@imvarda correct....frozen is usually more nutritious then "most" fresh..meaning store bought which can sit around a week or more going limp...picked fresh and eaten soon is best...but frozen is great too...I can my own beans which preserves their flavor and texture..but the cooking process tends to kill off some nutrition...
Great job Keith, Thanks for using preserved vegetables. We preserve our own and rarely see great cooks use them. Your encouragement means a lot. How about a recipe using preserved beets? Be well.
I love 'one pan' pasta dishes with this and that. And good bacon...oh, yes! I'm not sure it qualifies as food of the gods, but that's good - leaves more for me. :D
@WhiteTiger333 me too, tat is how they do it in Italy...as for the beans this is the rare case I would buy canned instead of frozen if I did not have local or fresh..frozen green beans in my opinion have a funny texture..ice crystals damage the beans while frozen..a good canned brand is Blue Lake...they re good
@keithsnow Thanks for the perspective, Keith. True about frozen green bean texture. They always seem a bit rubbery (now I know why) and I'm not keen on them. I tend to ignore them in winter for that reason. :D Fortunately, I love cabbage and most root vegetables, which I tend to ignore in the summer.
@WhiteTiger333 sounds as if you don't need me to tell you about the benefits of seasonal eating....way to go! You'd be amazed how many times I have to explain why eating asparagus in December is NOT good here in the states... because they are NOT FROM AMERICA..eat local...if you do...you'll be eating in season
