Seems like this could have been done with standard keys layout using the same shaped keys. since it seems to recognize sudden angular changes as keystrokes. Its basically typing without lifting up your finger or in this case stylus. Nice stuff.
This technology is now called "ShapeWriter" and is commercialized by ShapeWriter, Inc.
You can download it for the iPhone by visiting the AppStore. The application is called "WritingPad" (ShapeWriter, Inc.) and is in the "Productivity" category.
It is not free, you should first text them to get a code.

Hmmm.. I can type faster than that, even on a iPhone/iPod Touch keyboard, no stylus needed.
And besides a stylus will always get lost.
