The joke would have worked with a person of ANY other race, because cooking in Japan is taken very seriously and one is supposed to spend years learning how to do it; and since people of other races is such an uncommon thing over there it would be too weird to see a black, white, latin or whatever chef.

There's several GNT skits that feature the black guy (I don't really know his name) and none of them makes fun of his race.

This is not racist. There is a custom in Japan that a chef appears for greetings or explaining about his dishes, i.e., materials, recipes, or something like that in front of customers. Japanese cuisine requires many years to master, so there are almost no foreigners to be expected to appear in front of customers especially in rural Japanese traditional hotels.

To be come a professional Sushi chef it takes years of training, with how to cut many diffrent types of fishes, presenting them well and learn immense amount of knowledge with fish.

In Japan Black people (or non-orient) are still rare, so you don't expect a Black Person to be a professional Sushi chef. To be honest this joke would've worked if the sushi chef was white.

The joke worked because it was unexpected, not out of racism.
